Ingredients
  

  • For the Chicken
  • 2 lbs boneless skinless chicken thighs or breasts
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 large eggs or ¾ cup buttermilk
  • cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • Cooking spray or olive oil spray
  • For the Hot Honey Sauce
  • ½ cup honey
  • 2 tablespoons butter
  • 1 –2 tablespoons hot sauce adjust to taste
  • Optional: pinch of chili flakes

Method
 

  1. Preheat oven to 425°F (220°C). Place a wire rack over a baking sheet and spray lightly with oil.
  2. Season chicken with salt, pepper, paprika, and garlic powder.
  3. Set up breading station: eggs in one bowl; panko mixed with Parmesan in another.
  4. Dip chicken into egg, then coat well with breadcrumb mixture, pressing gently.
  5. Arrange chicken on the wire rack. Spray lightly with oil.
  6. Bake 25–30 minutes, flipping halfway, until golden and cooked through.
  7. Meanwhile, combine honey, butter, and hot sauce in a small saucepan. Warm gently until smooth.
  8. Drizzle hot honey sauce over chicken just before serving.
