Dip chicken into egg, then coat well with breadcrumb mixture, pressing gently.
Arrange chicken on the wire rack. Spray lightly with oil.
Bake 25–30 minutes, flipping halfway, until golden and cooked through.
Meanwhile, combine honey, butter, and hot sauce in a small saucepan. Warm gently until smooth.
Drizzle hot honey sauce over chicken just before serving.
