Beef Stroganoff (Gordon Ramsay–Inspired)

Ingredients
  

  • For the Beef
  • 1 lb 450 g sirloin steak or beef fillet, thinly sliced
  • Salt & freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • For the Sauce
  • 1 tablespoon butter
  • 1 small onion finely chopped
  • 8 oz 225 g mushrooms, sliced
  • 2 cloves garlic minced
  • 1 cup beef stock
  • 1 teaspoon Dijon mustard
  • ½ cup heavy cream
  • ½ cup sour cream
  • Fresh parsley chopped (for garnish)
  • For Serving
  • Egg noodles mashed potatoes, or rice

Method
 

  1. Sear the Beef
  2. Season beef with salt and pepper. Heat oil in a large skillet over high heat. Sear beef quickly in batches until browned. Remove and set aside.
  3. Cook Aromatics
  4. Lower heat. Add butter, onion, and mushrooms. Cook until mushrooms are golden and onions soft. Add garlic and cook briefly.
  5. Build the Sauce
  6. Pour in beef stock and let reduce slightly. Stir in Dijon mustard and cream. Simmer gently.
  7. Finish
  8. Return beef to the pan. Warm through, then remove from heat and fold in sour cream. Adjust seasoning.
  9. Serve
  10. Garnish with parsley and serve immediately over noodles or potatoes.
