Cook fries according to package directions (or air-fry) until extra crispy. Set aside.
In a skillet over medium heat, cook ground beef with onion until browned; drain excess fat.
Add garlic, paprika, chili powder, cumin, salt, and pepper. Cook 1–2 minutes until fragrant.
Warm tortillas briefly to make them pliable.
Assemble: add beef, crispy fries, cheese, and sauces to each tortilla.
Fold sides in and roll tightly into burritos.
Optional: toast burritos seam-side down in a skillet until golden and cheese is melted.
Serve hot.
