Ingredients
  

  • Meatloaf Layer
  • lb ground beef 80/20 or lean
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • Mashed Potato Layer
  • 3 cups mashed potatoes prepared
  • ½ cup sour cream
  • 2 tbsp butter melted
  • Cheesy Topping
  • cups shredded cheddar cheese
  • Optional Toppings
  • Cooked crumbled bacon
  • Chopped green onions

Method
 

  1. Preheat Oven
  2. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  3. Make Meatloaf Base
  4. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, salt, and pepper. Mix gently until just combined.
  5. Assemble Base Layer
  6. Press the meat mixture evenly into the bottom of the prepared baking dish.
  7. Add Potato Layer
  8. Mix mashed potatoes with sour cream and butter. Spread evenly over the meatloaf layer.
  9. Top with Cheese
  10. Sprinkle shredded cheddar cheese evenly over the potatoes.
  11. Bake
  12. Bake uncovered for 40 minutes, or until meat is cooked through and cheese is melted and bubbly.
  13. Rest & Serve
  14. Let rest for 10 minutes before slicing and serving.
