Ingredients
  

  • Potato Filling
  • 2 lb russet or Yukon Gold potatoes peeled and diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp salt
  • ½ tsp black pepper
  • Burritos
  • 6 large flour tortillas
  • cups shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese optional
  • Optional Add-Ins
  • Sour cream or chipotle sauce
  • Salsa or hot sauce
  • Chopped green onions

Method
 

  1. Cook the Potatoes
  2. Heat olive oil in a large skillet over medium-high heat. Add diced potatoes and cook, stirring occasionally, until golden and crispy on the outside and tender inside.
  3. Season
  4. Sprinkle paprika, garlic powder, onion powder, salt, and pepper over the potatoes. Toss well to coat evenly.
  5. Warm Tortillas
  6. Heat tortillas briefly in a dry skillet or microwave until soft and pliable.
  7. Assemble Burritos
  8. Spoon crispy potatoes into the center of each tortilla. Top with shredded cheese and any optional add-ins.
  9. Roll
  10. Fold in the sides and roll tightly into burritos.
  11. Optional Toasting
  12. Toast burritos seam-side down in a skillet until lightly golden.
  13. Serve
  14. Serve warm with extra sauce on the side if desired.
