Cowboy BBQ Bacon Cheddar Chicken

Ingredients
  

  • Chicken
  • 4 boneless skinless chicken breasts (or thighs)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Topping
  • ¾ cup barbecue sauce your favorite style
  • 6 slices bacon cooked crisp and crumbled
  • cups shredded sharp cheddar cheese
  • Optional Garnish
  • Chopped green onions or parsley

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken on both sides with salt, pepper, garlic powder, and smoked paprika.
  3. Arrange chicken in the baking dish and spoon barbecue sauce evenly over each piece.
  4. Bake uncovered for 20–25 minutes, until chicken is nearly cooked through.
  5. Remove from oven and sprinkle bacon evenly over the chicken.
  6. Top generously with shredded cheddar cheese.
  7. Return to oven and bake 8–10 minutes, until cheese is melted and bubbly.
  8. Remove from oven and rest 5 minutes before serving. Garnish if desired.
