Creamy Jalapeño Chicken

Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 2 –3 fresh jalapeños sliced (seeded for mild)
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup chicken broth
  • Optional: red pepper flakes chopped parsley

Method
 

  1. Season chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden on both sides; remove and set aside.
  3. In the same skillet, sauté onion until soft. Add garlic and jalapeños; cook until fragrant.
  4. Lower heat and add cream cheese, stirring until melted. Gradually whisk in chicken broth until smooth.
  5. Stir in shredded cheese until sauce is creamy.
  6. Return chicken to skillet, spoon sauce over top, and simmer 10–15 minutes until chicken is cooked through.
  7. Adjust seasoning and garnish if desired. Serve hot.
