Ingredients
  

  • 2 cups cooked shredded chicken rotisserie recommended
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons salsa or enchilada sauce
  • 12 small corn or flour tortillas
  • 2 tablespoons olive oil or cooking spray

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or use a wire rack.
  2. In a bowl, mix chicken, cream cheese, shredded cheese, spices, salt, pepper, and salsa until well combined.
  3. Warm tortillas slightly to prevent cracking.
  4. Spoon filling along one edge of each tortilla and roll tightly.
  5. Place taquitos seam-side down on the baking sheet.
  6. Lightly brush or spray with olive oil.
  7. Bake 20–25 minutes, flipping halfway, until golden and crispy.
  8. Serve hot with your favorite dips.
