Ingredients
  

  • Chicken
  • lb chicken tenders or chicken breasts sliced into strips
  • Salt and black pepper to taste
  • Breading
  • cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Binding
  • 2 large eggs
  • For Baking
  • Cooking spray or olive oil spray

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Pat chicken dry and season lightly with salt and pepper.
  3. In one bowl, whisk eggs. In another bowl, mix breadcrumbs, Parmesan, and seasonings.
  4. Dip chicken into eggs, then coat evenly in breadcrumb mixture, pressing gently.
  5. Place chicken on prepared baking sheet. Lightly spray tops with oil.
  6. Bake for 10–12 minutes, flip, then bake another 8–10 minutes until golden and cooked through.
  7. Rest 3–5 minutes before serving.
