Ingredient Potato Soup

Ingredients
  

  • 2 lbs russet potatoes peeled and diced
  • 4 cups chicken broth or vegetable broth
  • 1 cup whole milk or heavy cream
  • 3 tbsp unsalted butter

Method
 

  1. Add diced potatoes and broth to a large pot.
  2. Bring to a boil, then reduce heat and simmer until potatoes are very tender (about 20–25 minutes).
  3. Lightly mash potatoes directly in the pot until desired consistency is reached.
  4. Stir in butter until melted.
  5. Reduce heat to low and add milk or cream, stirring gently.
  6. Heat through without boiling. Serve warm.
