Method
- Add diced potatoes and broth to a large pot.
- Bring to a boil, then reduce heat and simmer until potatoes are very tender (about 20–25 minutes).
- Lightly mash potatoes directly in the pot until desired consistency is reached.
- Stir in butter until melted.
- Reduce heat to low and add milk or cream, stirring gently.
- Heat through without boiling. Serve warm.
