Ingredients
  

  • cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • ½ cup powdered sugar for rolling

Method
 

  1. Mix Dry Ingredients
  2. Whisk flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Cream Butter & Sugar
  4. Beat butter and granulated sugar until light and fluffy.
  5. Add Wet Ingredients
  6. Mix in egg, lemon zest, lemon juice, and vanilla until smooth.
  7. Combine
  8. Gradually add dry ingredients, mixing just until combined.
  9. Chill Dough
  10. Cover and chill dough for 30 minutes.
  11. Roll & Coat
  12. Roll dough into 1-inch balls and generously coat in powdered sugar.
  13. Bake
  14. Bake at 350°F (175°C) for 10–12 minutes until crinkled and set around the edges.
  15. Cool
  16. Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack.
