Mix Dry Ingredients
Whisk flour, baking powder, baking soda, and salt in a bowl. Set aside.
Cream Butter & Sugar
Beat butter and granulated sugar until light and fluffy.
Add Wet Ingredients
Mix in egg, lemon zest, lemon juice, and vanilla until smooth.
Combine
Gradually add dry ingredients, mixing just until combined.
Chill Dough
Cover and chill dough for 30 minutes.
Roll & Coat
Roll dough into 1-inch balls and generously coat in powdered sugar.
Bake
Bake at 350°F (175°C) for 10–12 minutes until crinkled and set around the edges.
Cool
Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack.
