One-Pot Cheesy Taco Pasta

Ingredients
  

  • Base
  • 1 lb ground beef or ground turkey/chicken
  • 1 tbsp olive oil if needed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • Seasoning
  • 1 packet taco seasoning or 2 tbsp homemade
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • Pasta & Sauce
  • 12 oz short pasta shells, rotini, or penne
  • 1 can 14.5 oz diced tomatoes, undrained
  • cups beef or chicken broth
  • Cheesy Finish
  • cups shredded cheddar or Mexican-blend cheese
  • Optional Toppings
  • Chopped cilantro
  • Green onions
  • Sour cream or hot sauce

Method
 

  1. Heat a large pot or deep skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add onion and cook until softened. Stir in garlic and cook until fragrant.
  3. Sprinkle in taco seasoning, salt, and pepper. Stir well to coat the meat.
  4. Add diced tomatoes, broth, and dry pasta. Stir to combine.
  5. Bring to a gentle simmer, cover, and cook 12–15 minutes, stirring occasionally, until pasta is tender and sauce thickened.
  6. Reduce heat to low. Stir in shredded cheese until fully melted and creamy.
  7. Remove from heat and rest 3–5 minutes before serving. Add toppings if desired.
