Sour Cream Beef Noodle Casserole

Ingredients
  

  • For the Noodles
  • 8 oz egg noodles
  • Salt for boiling water
  • For the Beef Layer
  • 1 lb lean ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup tomato sauce
  • Salt and black pepper to taste
  • For the Creamy Layer
  • 1 cup sour cream
  • 3 tablespoons unsalted butter softened
  • For Assembly
  • cups shredded cheddar cheese
  • Fresh parsley chopped (optional)

Method
 

  1. Cook the Noodles
  2. Bring a large pot of salted water to a boil. Cook egg noodles until just tender. Drain and set aside.
  3. Cook the Beef
  4. In a skillet over medium heat, brown the ground beef. Drain excess fat. Add onion and garlic; cook until softened. Stir in tomato sauce, salt, and pepper. Simmer 5 minutes.
  5. Make Creamy Mixture
  6. In a bowl, mix sour cream and softened butter until smooth.
  7. Assemble
  8. In a greased baking dish, layer half of the noodles, half of the sour cream mixture, half of the beef sauce, and half of the cheese. Repeat layers.
  9. Bake
  10. Bake at 350°F (175°C) for 25–30 minutes, until bubbly and heated through.
  11. Serve
  12. Let rest 5–10 minutes before serving. Garnish if desired.
