  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt
  • cups milk
  • 2 large eggs
  • 3 tablespoons melted butter plus more for cooking
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar Coating
  • cup granulated sugar
  • teaspoons ground cinnamon
  • 2 tablespoons melted butter for brushing

Method
 

  1. In a bowl, whisk flour, baking powder, sugar, and salt.
  2. In another bowl, mix milk, eggs, melted butter, and vanilla.
  3. Gently stir wet ingredients into dry until just combined (do not overmix).
  4. Heat a lightly buttered skillet over medium heat.
  5. Pour batter to form pancakes. Cook until bubbles form, flip, and cook until golden.
  6. Brush warm pancakes with melted butter.
  7. Toss or sprinkle generously with cinnamon sugar.
  8. Serve warm with desired toppings.
