Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, gently mix all meatloaf ingredients until just combined.
Press meat mixture into a rectangle on the parchment paper.
Sprinkle cheese evenly down the center, leaving space at the edges.
Carefully roll the meat around the filling and seal seams.
Transfer to baking dish or leave on sheet pan. Top with marinara if using.
Bake for 50–55 minutes, until internal temperature reaches 165°F (74°C).
Rest 10 minutes before slicing and serving.
